1506 Potatoes

My mom used to make a recipe similar to this when I was in high school before seminary.  I usually wasn't ever hungry in the morning, but this stuff is so good I couldn't resist.  So upon moving to Toronto, I jazzed up the recipe, added some spices and VOILA!  This is a hit in the morning, afternoon or evening. It's great with or without ketchup. Basically, it is a versatile masterpiece that you are bound to adore.

Ingredients:
1 tbsp butter
2 potatoes (best if they are pre-baked)
2 eggs, beaten
1 green onion
3 strips of bacon
1 tbsp garlic powder
1 tsp seasoning salt
1 tsp italian seasoning
1/4 cup cheese

1. Cook bacon in the frying pan until cooked but still tender. Tear into pieces and place aside in a bowl.
2. Skin the potatoes and cut into chunks. Put butter in frying pan until melted. Add potatoes and cook on medium heat until golden brown around the edges.
3. Season potatoes with the garlic powder, seasoning salt and italian seasoning.
4. Add bacon, chopped green onion and beaten egg to the pan, leave on medium heat until egg is cooked.
5. Sprinkle cheese on top of the mixture and serve while hot!
