Thai Lettuce Wraps















I really wanted to try lettuce wraps because of the guilt free "tortilla", so here's what I came up with.  These are so so so good.


Ingredients:
1 head lettuce
1 lb lean pork
2 tbsp minced garlic
1 large carrot, shredded
3 green onions, chopped
1 medium onion, chopped
3 stalks celery, chopped fine
1/2 package of fine rice noodles
2 tbsp Hoisin sauce
2 tbsp Oyster sauce

Instructions:
1.  Peel large leaves of lettuce off of head, place in fridge to crisp.
2.  Cook pork in frying pan, drain any grease
3.  Add garlic, chopped onion, green onion, celery and carrot to frying pan.
4.  Cook rice noodles in pot of boiling water until cooked (takes about 2 min)
5.  Drain noodles, add to frying pan with pork and vegetables.
6.  Cut noodles with kitchen scissors into bite size peices, mix with rest of mixture
7.  Add hoisin sauce and oyster sauce to pork and vegetable mixture, mix well.
8.  Spoon onto lettuce leaves, wrap up, and EAT!

BBQ Chicken Pizza

So I'm honestly not much of a BBQ chicken person . . . but I felt inspired to make this, and LOVED IT.  In fact, it was honestly the best pizza I have ever eaten.  AND it was low fat :)

Ingredients:
SAUCE
1/2 can reduced sodium tomato sauce
1/4 cup hickory BBQ sauce
1 tsp Worshestershire sauce
1/2 tsp sugar
1 tsp minced garlic
1 1/2 tbsp Italian seasoning (I love Mrs. Dash)
------------------------------------
1/4 cup hickory BBQ sauce

1 chicken breast - diced
1 onion (chopped)
1 red pepper (chopped)
* You will need your favourite pizza crust.  Mine was a whole wheat thin-crust recipe.  Remember, the thicker the crust the more carbs and calories you're eating. *Instructions:
1. Empty can of tomato sauce into bowl.  Add 1/4 cup BBQ sauce.  Mix in Worshestershire sauce, garlic, sugar and spices.
2. Cook chicken in frying pan until is no longer pink, add about 1/4 cup of BBQ sauce and mix well. Add onions to the frying pan and mix all together for 3-5 min on medium heat.

3. Roll crust out to make thin crust.  Transfer to pizza pan and spoon on as much sauce as preferred.  Sprinkle chicken, onions and red peppers onto the dough and sprinkle the top with just enough cheese.  Remember, less is more!!
4. Bake in oven at 375 degrees for about 1/2 hr or until crust is golden brown.
5. Let cool for 5 minutes, serve and enjoy!

Low-Fat Turkey Lasagna

This lasagna is delicious AND nutritious.  High in fiber, low in fat -- you really can't go wrong.
Ingredients:
8-10 whole wheat lasagna noodles 
1 large can crushed tomatoes
1/2 cup partly skimmed mozzarella cheese
2 tbsp Parmesan cheese
1 lb ground turkey
2 tbsp minced garlic (more or less depending on your love for garlic)
1 large onion (chopped)
1 tbsp Mrs. Dash Italian seasoning *
1 tbsp Mrs. Dash garlic & herb seasoning *
1 tsp basil
1 container fat free cottage cheese
3 tbsp egg substitute
Instructions:
1. Preheat oven at 375 F.
2.  Boil water for lasagna noodles.  Cook until al dente, rinse in cold water to prevent from sticking.
3.  Cook ground turkey in frying pan, drain extra water or grease if any.  Add garlic and onion.  Cook until onions have softened.
4.  Add can crushed tomatoes and spices to turkey.  Let sauce simmer in frying pan.
5.  Mix egg substitute with fat-free cottage cheese.
6.  Spray lasagna pan, spread with thin layer of tomato sauce.  Layer noodles, cottage cheese mixture, meat sauce in whatever order you like best.  Sprinkle the very top with mozzarella cheese and a sprinkle of Parmesan.  Put in oven for 30 minutes, enjoy!
*Mrs. Dash has zero sodium and no MSG, and contains potassium. Very flavourful without all the garbage your body doesn't need.

Chickeny Winey Sauce

This can be eaten on a bed of rice of a bowl of pasta, whichever you feel like.  Personally, pasta is my favourite (we had pasta today).

Ingredients:
6 chicken thighs
1 can cream chicken/cream mushroom soup
2 tbsp sour cream
¼ cup white cooking wine
2 tbsp honey

1 sachet chicken OXO

1 tbsp minced garlic
1 tsp Italian seasoning


Instructions:
1. Whisk all ingredients minus the chicken thighs together in a medium sized bowl. Spoon into small pan (we used a loaf pan)
2. Mix chicken into the sauce
3. Put in oven (preheated to 375 degrees F) for 25 min
4. Sauce is quite runny after taking out of oven... tastes the same, but you may want to mix with water & cornstarch.
5. Serve immediately! On top of rice or pasta.

Pollo Perfecto


I used to eat this all the time with my former roomie in Toronto.  This is so easy.  Seriously, you can make this in about five minutes.  And it's one heck of a chicken salad sandwich. Mmmmmm.

Ingredients:
Roteissery-style chicken
Mayo
Ranch Dressing
Green Onion
Celery

Instructions:
1. Seperate the chicken from the bone and put into bowl.  Remove from bowl, place on cutting board.  Chop the chicken into fine pieces.
2. Put chicken back into the bowl (tedious, yes, calm down.)
3. Now mix with about 3/4 cup mayo and 1/4 cup Ranch.  However, this really depends on how much chicken you have.  
4. Chop celery and green onion into small pieces.  Add to chicken mixture.
5. Spoon onto bun.  Eat!

*TIP: Is also good with a slice of cheese on top and broiled in the oven!!*

Soup- The kind the French people eat.


CREDIT: This recipe is from Amy B, it's yummy.
This is a ridiculously easy french onion soup recipe that is sure to tickle your papilla, gingiva, and tastebuds. I'm telling you, it is one big party in your mouth. This recipe goes great with "parotid gland stimulating chicken" and your favourite garlic bread. Yields 2 servings.


Ingredients:
3 Cups of water
5 beef boullion packets
(or you can use 3 cups of a ready-made beef broth)
1 tbsp of Worcestershire sauce
2 tbsp of garlic
1 large onion
2 tsp of thyme
1 tbsp of olive oil
1/2 cup of mozzarella cheese
Your favourite Italian bread- we like manucher

Instructions:
1. Mince the onion with a "SMAK" if you have one. If you don't have one, a knife works O.K.
2. In a frying pan, saute the onions with the garlic, thyme and olive oil until soft.
3. In a sauce pan, boil the water and add in the beef boullion and Worcestershire sauce. Add salt to taste.
4. Add in the sauted onions and leave to simmer for 5 minutes
5. Seperate into bowls
6. Rip apart pieces of bread and put on top of the soup, then sprinkle the cheese on top of the soup
7. Put the soup into the oven on Broil until cheese is melted
8. Devour

The Best Dosh Garn Pizza You've Ever Had!!!


OK. This pizza is soooooo delicious!!!!! That is all I can tell you. MAKE IT! You won't be dissapointed.

I. PIZZA DOUGH! This was discovered by a wonderful catalogue recipe book from Panago and modified by us!

Ingredients:
1 tbs yeast
1 1/4 cup warm water

1 tbsp honey
4 cups flour
1 tsp salt
1 tbsp oregeno

1 tsp Italian seasoning
1/2 cup cheese


Instructions:

1. In a med. bowl, mix together the yeast, warm water and honey. Let sit for 5-10 min.
2. In a large bowl, mix together the flour, salt, oregano and Italian seasoning. Make a well in the flour mixture and pour in the concoction from the med. sized bowl.
3. Pour in 2 tbsp olive oil and mix together
4. Knead for 10 min.
5. Let sit covered with damp cloth for 45 min
6. Punch down the bread, cut in half, let it rise again for 20 more min.
7. Roll out into pizza shape!
8. Toss the dough in the air! This is a must for the whole pizza experience. Toss! Catch! Yum!
9. Put dough on the pizza pan and pinch cheese into crust. It's fabulous.

II. SAUCE!
This pizza sauce is fantastic. Credit to Lonni McMullen for the original recipe, hers is amazing but I lost it. :( However this one is good too!

INGREDIENTS:
1 can of tomato sauce
2 1/2 tbsp Italian seasoning
1 tsp minced garlic
2 tsp white vinegar
1 1/2 tsp Worchestershire sauce
1 tsp sugar

Mix the ingredients together! We like a really strong sauce, lots of spice and flavour. You can modify however you like! Just taste, and add a little of this, a little of that. Simple and sooo yummy.

PIZZA!
For our pizza, (and I strongly, strongly recommend this...) we loaded it up with Italian sausage, bacon, pepperoni, pineapple and green pepper; COVERED it in cheese and sprinkled the top with parmasean.

BAKING INSTRUCTIONS:
Bake for 20-30 min (depending on how well done you like your pizza) at 375 degrees F.

It is so, soo good. Make it! NOW!!!!
